Beefy Bacon Bombs

These beefy bacon bombs explode with a complex set of flavors – beef, pork, cheese, Worcestershire, garlic and bacon finished off with a sweet glaze. They’re easy to make which is good because your family and friends will ask for them often!

Beefy Bacon Bombs


  • 1 pound of ground beef
  • 1 pound of mild pork sausage
  • 1 cup of crumbled feta cheese
  • 1 egg
  • 1/2 cup of panko bread crumbs
  • 12 slices of thick cut bacon
  • Three Little Pigs Memphis Style rub from BBQ Pit Stop
  • Swamp Boys Original BBQ sauce from BBQ Pit Stop

Combine ground beef, sausage, feta cheese, egg, panko bread crumbs and 1 tablespoon of the Three Little Pigs rub in a bowl. Mix together thoroughly with your hands. Cover and put in the refrigerator to chill for an hour.

Pre-heat your smoker to 350 degrees. Shape the meat mixture in to balls between 1 1/2″ to 2″ around. It’s important to keep them as consistent as possible in size so they cook evenly. I use an ice cream scoop.

Pour a generous amount of the Three Little Pigs Memphis rub into a bowl. Roll each meatball in the rub to completely coat it. After you’ve finished be sure to discard the remaining rub.

Next wrap each meatball with a strip of bacon. Use toothpicks to secure the bacon. Place them in your preheated smoker.

When the internal temperature reaches about 140 degrees baste them with a nice thick coat of the Swamp Boys BBQ sauce and close the smoker.

When the internal temperature reaches 160 degrees your Beefy Bacon Bombs are ready to serve with a bowl of Swamp Boys sauce on the side. Get ready for an explosion of compliments!
